Wine
with the meal
I do not arrive with a cellar. If the house has wine, I ask what you want to drink and I cook toward it. A firm white with the fish. A lighter red if the main course is a bird or a braise. Water on the table either way.
Bottles that need air are opened while the room is being set, not when the course is already in the pass. Temperature is the other half: whites out of the cold drawer in time, reds not left on a sunny terrace.
If you would rather I suggest a shop, I will. The suggestion is a bottle that fits the menu and the evening, bought by you. Pouring, if you want it, stays simple. One glass, then the bottle within reach.
