The boats
Fish is a morning purchase. Clear eyes, red gills, a smell of the sea and not of the counter. If the monger cannot say when it landed, I buy something else.
I would rather cook one whole fish well than four fillets that have been waiting. Sea bream, a small bass, sardines when they are fat, langoustines if they are still moving. The menu follows the counter, which is the only honest way to write a fish dinner.
It is cooked the day it is bought. Acid, olive oil, a short time on the heat. The plate does not need a sauce that hides the fact you were late to the harbour.
