Spring
on the market
Spring on this coast is short and green. Asparagus arrives, then peas, then broad beans that are worth the trouble of podding. The artichokes are still tight. Strawberries show up before anyone is ready for them.
I buy less and cook it the same day. A bowl of peas does not need a long menu around it. An omelette, a risotto, a plate of asparagus with a soft egg and enough olive oil. The point of the season is that the vegetable is the dish.
By the time the terrace is too hot for lunch, this produce is gone. That is the reason to eat it in April and May, and not to reprint the same plate in August.
