Morning
at Cours Saleya
Cours Saleya is useful if you go early and leave with less than you could carry. The stalls repeat each other. The ones worth stopping at have produce that looks like it was picked, not unwrapped.
I buy the vegetable that will be the centre of one plate, herbs, and fruit for the end of the meal. Fish is often better a street away, from a counter that will tell you what came in. Bread from a baker, not from the stall selling everything else.
By late morning the square is a walk, not a shop. If the dinner is in Cimiez or on the port, the bags go straight to the kitchen and the menu is written from what is actually in them.
