How many courses

How
many courses
A long menu is not a better menu. Four people who want to talk need fewer plates than a celebration that is built around the food. I ask how long you want to be at the table, and I write to that.
Three courses is a complete dinner: something sharp to start, a main plate with a vegetable that belongs to it, and a dessert that does not ask for a speech. Five or six courses suit a table that has come for the cooking and has the evening free.
What I will not do is pad a menu with sorbet and a second garnish so that a number looks impressive. Each plate has to earn the time it takes to clear the last one.
