A in the house
The day starts at the market or with what was bought the evening before. Coffee is on. Breakfast is fruit, bread, eggs if anyone wants them, and the table left so the house can use the kitchen afterwards.
The middle of the day is prep. Stocks, a sauce that needs time, vegetables cut and kept cold, a dessert that can wait. Lunch is served if the house is in. If everyone is out on the water, lunch becomes a plate they can eat when they come back.
Dinner service is the part that looks like a restaurant and should not feel like one. I cook, I plate, I clear, and I am gone once the kitchen is finished. The hour is the one you asked for, not a turn that has to be reset for the next table.
