  • 150.0 g Pomegranate seeds
  • 60.0 g Pistachios (shelled)
  • 30.0 g Fresh mint
  • 30.0 g Fresh parsley
  • 0.5 piece Red onion
  • 60.0 ml Orange juice
  • 45.0 ml Extra virgin olive oil
  • 5.0 g Sumac

Instructions

    Cook quinoa, fluff and let cool completely.

    15 minutes

    Finely chop mint, parsley, and red onion.

    Whisk orange juice, olive oil, and sumac for dressing.

    Combine quinoa with herbs, onion, and most of the pomegranate seeds.
