  • 400.0 ml Heavy cream
  • 200.0 ml Whole milk
  • 12.0 g Ceremonial matcha powder
  • 4.0 pieces Gelatin sheets
  • 60.0 ml Raw honey
  • 5.0 ml Vanilla extract
  • 50.0 g White chocolate (optional)

Instructions

    Bloom gelatin sheets in cold water for 5 minutes.

    Whisk matcha with a small amount of warm milk until smooth paste forms.

    Heat cream, remaining milk, and honey until steaming.

    Remove from heat, whisk in bloomed gelatin and matcha paste.

    Pour into ramekins, refrigerate at least 4 hours until set.

    Serve with optional white chocolate shavings.
