- 300.0 g Sweet potato
- 2.0 pieces Red bell pepper
- 2.0 pieces Zucchini
- 1.0 piece Red onion
- 40.0 g Fresh parsley
- 15.0 g Fresh oregano
- 4.0 cloves Garlic
- 30.0 ml Red wine vinegar
- 80.0 ml Extra virgin olive oil
Instructions

Cut vegetables into uniform pieces, toss with olive oil, roast at 200°C for 25 minutes.

Make chimichurri: blend parsley, oregano, garlic, vinegar, and olive oil.

Bring steak to room temperature, season generously with salt and pepper.

Sear steak in cast iron over high heat, 4 minutes per side for medium-rare.
