  • 600.0 g Grass-fed sirloin steak
  • 300.0 g Sweet potato
  • 2.0 pieces Red bell pepper
  • 2.0 pieces Zucchini
  • 1.0 piece Red onion
  • 40.0 g Fresh parsley
  • 15.0 g Fresh oregano
  • 4.0 cloves Garlic
  • 30.0 ml Red wine vinegar
  • 80.0 ml Extra virgin olive oil

Instructions

    Cut vegetables into uniform pieces, toss with olive oil, roast at 200°C for 25 minutes.

    Make chimichurri: blend parsley, oregano, garlic, vinegar, and olive oil.

    Bring steak to room temperature, season generously with salt and pepper.

    Sear steak in cast iron over high heat, 4 minutes per side for medium-rare.

    Rest steak 5 minutes, slice against the grain, serve over vegetables with chimichurri.
